I take it from your question that you've got the skills to set up as a contractor. Given that there is are a lot of Brits buying property in France, often property requiring renovation, might they not find a reliable, English speaking, British trained contractor very appealling?
As an EU citizen you have every right to set up your own business in France rather than work for a French company.

Sorry to break it to you but the french people NEVER give jobs to english people, its ETREMELY difficult to find a job in france. I know alot of english people who speak fluent french and are well qualified but cant get a job in France, especially southern france.
