Awesome Tubigen bread? |
Hi, I visited Tubigen Germany recently. When I was there I enjoyed a type of bread that I have never had before and I would like to try making this bread at my home.I have looked for the recipe everywhere but I never have found it. If you are from Tubigen you will know the bread I am talking about. It is full of seeds and covered with seeds and has a very heavy texture. Just thinking about it makes me want to eat it. Does anyone have this recipe? 10 pts to you. |

I don't think it's specific to Tuebingen, you probably mean Vollkornbrot:
http://images.google.co.uk/images?q=vollkornbrot&ie=UTF-8&oe=utf-8&rls=org.mozilla:en-GB:official&client=firefox-a&um=1&sa=N&tab=wi
One of my all time favourites as well, bread is one of the things I miss about Germany most, don't like the toast they pass of as bread or even wholemeal bread in the UK, lol.
Anyhow, these sites lists a lot of different receipes:
http://www.chefkoch.de/rs/s0/vollkornbrot/Rezepte.html
http://www.kochmeister.com/s/vollkornbrot+rezept
It is in German but you'll probably be able to find somewhere on the internet to translate it, babelfish could work although it occasionally does come up with some odd ones...

I know a good recipe for that spiced bread you mean, but the basic ingredient is sour dough, not just baker's yeast; and sour dough is not readily available everywhere. But if you know how to make a good bread dough, try the following spices:
parsley, coriander, caraway, anisede, black pepper (freshly crushed), and crushed hazelnuts. It makes a delicious spice mixture; how much you use of each is just up to your taste. I like the anisede taste, but prefer it with lots of black pepper; some people like it less spicy and add some sesame to the mixture or the dough. Try it out and experiment a little; you might be disappointed the first time by the result, but baking bread really isn't rocket science. You can even invent your own. |
