You're in luck -- I just got back from Berlin last week and I LOVED it!
There's really so much to do -- even in eight days -- that I can't possibly tell you EVERYTHING worth doing, but I can certainly give you some highlights. Bear in mind that Berlin has 175 museums, so you couldn't even do them all if you tried! (Well, maybe if you tried REALLY hard......and didn't take breaks to eat or anything. Or sleep.)
Anyway, here are some great off-the-wall (um, no pun intended) Berlin things to do:
* Berlin on Bike: I took a fabulous 4-hour guided tour around Berlin with this company and had a brilliant time. They have guides who speak English and German (my guide was actually an American guy from Connecticut) and the tours can pretty much be tailored to what you want to see. Bring sunscreen though -- you'll be under the sun all day! http://www.berlinonbike.de/english/index.php
* Trabi Safari: the Trabi (officially called the Trabant) was once the most popular car in the former GDR -- pretty much because it was cheap and easy to produce. They're a riot to drive, and you get a real overview of the city by taking this "safari" -- YOU drive the car and a guide in the car in front of you leads the way, communicating with you through a two-way radio. It's pretty much unlike anything you'll ever have done before, and the guides are all really friendly. Plus, it's right next to Checkpoint Charlie so you can head over there once you're done. http://www.trabi-safari.de/e78/e92/index_eng.html
* Go Art tour: Berlin is famous for its proliferation of artists -- gallery space is cheap and creativity blossoms! This company will take you on a fantastic tour of some great galleries, studios, stores, and memorials -- really, really fascinating if you're interested in the creative side of Berlin. http://www.goart-berlin.de/english/index.htm
* Berlinagenten: If you're more interested in Berlin's nightlife and restaurant scene, this "lifestyle company" (headed up by Henrik Tidefjärd, who is so funny that he's pretty much worth the price of the tour alone) will arrange personalized tours of Berlin's hotspots -- it's a great way to get an insiders look at Berlin while feeling like a local. Highly recommended -- I had a great time on this tour. http://www.berlinagenten.com/
* Zagreus Project: if you're looking for a really off-the-beaten-track place for dinner, the Zagreus Project is perfect: you make a reservation and then show up for a catered dinner based around an art exhibit -- the food amazing and the ambiance unbeatable. You sit family-style with other diners, and you're PART of the art. It's really, really cool, and definitely something you won't have done before.

Aside from the suggestions above, you must check out the Jewish Museum (plan to spend at least a few hours there), the Deutsches Historisches Museum, and the Holocaust Memorial (you can wander through it -- it's very powerful.) Watch the sunset from atop the Reichstag, visit the Brandenburg Gate, and don't forget to eat a Currywurst!
