Frauholzer gave a pretty good answer, but let me add some:

At the Nazi Rally Grounds is now a wonderful museum/ documentation center where you can learn more about it.
If you are there in the summer, go to one of the public pools, my favorite the Stadion Bad, close to the Nazi Rally Grounds, but older, was build in the golden 1920s.

Visit the Planetarium, great one.

If you like bars, dancing...lots of great places to go, both in the old downtown and in the outlaying areas.

Besides the fortress/castle, don't forget to just walk along the long city wall and inside the moat - its lovely.

The TV Tower is pretty impressive if you haven't been in a larger one, its on the southside of town. Large channel there too if you like things like that.

There are some smaller castles and cemeteries to visit in the subburs which used to be their own cities, some still are..its lovely to see the smaller ones.

If you like toys, or have kids, the Playmobil Playland just west of Nuremberg in Zirndorf is neat.

Take a paddleboat ride on the Dutzendteich (on the Nazi Party Rally grounds as well)

You MUST visit some of the wonderful beergardens - even if you don't like beer.

If you haven't had it, have a Döner Kebab (yes, it is turkish, but the Döners made in germany are better than any ones I had in US or Ireland...)

Now I am homesick...

Visit the town square. Very impressive. There is 2 churches that are cool. They are known for there brats so have one. I just got back yesterday and was in Germany for 2 weeks.

The Spielzeug Museum
The dungeon under the city hall.
You can go to the old grounds where Hitler held his rallys
You can also see the building where the Nürnberg trials were held.
Nice graveyard where you can see Dürer's grave and others.
I think its the Lorenzkirche (might be the other one) has the Angel's greeting (Englische Gruss)and some very nice sculptures and woood carvings.
Nice little city. Very easy to get around, very nice people.
