Look for packets of "Speise Natron" at supermarkets; that's baking soda. "Weinsteinpulver" is what we call cream of tartar in the US and Backpulver is, as you know, baking powder. I haven't been able to find any big boxes of Arm & Hammer in Austria where I live; I just lug it over from the US when I go home every summer.

To make really fluffy pancakes, I use this recipe: http://allrecipes.com/Recipe/Fruit-Topped-Buttermilk-Pancakes/Detail.aspx

I've never made the fruit topping; I just use the pancake recipe and it's great. My trick is to add the baking soda to the buttermilk beforehand and let it rise a bit. Then make according to the recipe. It's fantastic and my kids love it!

It's Natron. Depending where you are in Germany, it should be available, although it's not always easy to find because a lot of grocery stores don't carry it. You can buy Kaiser Natron brand at Karstadt, Konsum and I've found Arm and Hammer (the big box) at various "Asia Markts".

Hirschhornsalz. That's the correct German translation for "Backsoda" (baking soda as you're used to in the U.S.), as in former times, it was really won by burning and then cleaning the ash of the remains of antlers of red deer ("Hirsch" in German). [Don't worry, we nowadays produce that chemically, like everyone does.]

---
Sorry to my follow-up posters, but Natron is NOT baking soda. Hirschhornsalz (the real baking soda) contains ammonia, which Natron doesn't. You use Natron for better digestion, maybe, but it's NOT good for baking. You can use it for soda water, if you like.

Cheshire Cat
Natron (NaHCO3) and Baking soda (NaHCO3)
are the same.
I know it because I searched for it some weeks ago(I had the same "problem" only that I live in the USA)

The Baking soda in the USA and the Natron in Germany have both the same chemical formula (NaHCO3)
to proof it

Unfortunately the Germans do not have 2 different words for these, backpulver is the same translation for both.
