Stuttgart is quite nice for one day - combined with some shopping; also the famous zoo (http://www.wilhelma.de/en/visiting-us.html ).
near Stuttgart you have many quaint little towns, for example Ludwigsburg with its castle (http://www.ludwigsburg.de/servlet/PB/menu/1026879_l2/index.html ), or Esslingen with its beautiful old town centre (http://www.esslingen-tourist.de/english/Aktuell.htm ).
For longer trips (3 days plus), Lake Constance is the first choice from Ulm.
