There is little to no information on Hamburg before 800, because Hamburg was founded by the soldiers of Karl the Great at the beginning of the 9th century. They simply built a military point, and called it Hamm. Later, around 832 this castle is documented as Hammaburg.
I don't know if this is too late for you, since usually the Middle Ages are around 400Ad, aren't they? Well, here is what I know:
In 845 danish vikings destroyed parts of the city and the first church, but it was quickly rebuilt and Hamburg grows under Bishop Adaldag (937-988). By this time many craftsmen and tradespeople are residents of Hamburg, and the market right is established.
After being discharged, Pope Benedikt V. comes to Hamburg in the middle of the 10th century and lives here until his death in 966. He was buried in the Mariendom, but his remains were transported to Rome in 999.
In 950 Hamburg had around 500 residents. They were once again destroyed by the Obotrites in 983, but rebuilt once more.

Hamburg has seen many catastrophes and historically significant events. If you want to specify what dates you are looking for, it would be much easier helping you!
