Schengen Visa are counted by days, not by hours. So if overstaying 6-7 hours means you will leave in the morning of the day after your visa expires, then you actually overstay 1 day.
By law this makes you an illegal immigrant and might ban you from ever getting a visa to Germany again.
Although some police officers are more generous than others, I wouldn't risk it.
Get an extension in any case or fly back one day earlier.
