It depends on what you like, but here are some ideas.

You've already had a Rhine Cruise suggested. Specifically I'd suggest the Rhine Gorge between Koblenz and Bingen - this is the most spectacular portion of the Rhine, most scenic. Get off at one of the stops (Boppard, Bacharach) and drink a few glasses of spectacular wine.

Another spectacular sight in this area is Burg Eltz, just north of the Rhine. this castle has been in the same family for 800 years and was never hit during war - so it's very authentic to the time period. They also have an amazing treasury - with so many amazing artifacts!

Another spectacular castle is the Wartburg in Eisenach - a little out of the way for you, but worth the visit. The St. Elizabeth imagery is wonderful, the castle is the setting of the Meistersinger story and Luther hid out there from the pope - huge in German history and considered a German national treasure.

You mentioned Trier, so if your interest in history goes even further, you might consider visiting the Roman sights in Trier. The black gate surely meets your requirements, and you can visit the Roman baths and the ampitheatre, too - hard to fathom that this is several millennia old!

You mentioned Cologne, and if you are into churches, the cathedral there, the largest in Germany and a gothic wonder 800 years in construction is truly spectacular. This is one not to miss if you are in the area.

I find the medieval town of Goslar, not damaged in World War II to be pretty spectacular. Endless streets of half timbered housees and cobblestones, incredible old churches, and the Kaiserpfaltz, a palace from which the Holy Roman Empire was governed. Both the town and the nearby mine are UNESCO World heritage sights.

Hope this gives you at least one good ideal

You have to see lots of castles, especially if you have never been to Germany before. My personal favorite is Neuchswanstein Castle. It is in Bavaria and Walt Disney used it as his inspiration for Cinderellas Castle at all the disney parks. Visit some car factories too. Stuttgart has Mercedes and Porsche, Heilbronn has Audi. All of them are really cool. The Auto and Technik Museum in Seinsheim is awesome, they have Hitlers mercedes and it is the only place in the world where you can get into an Air France concord. (The rest were destroyed)
Hope you have a good trip!

For fun and beautiful I would recommend a cruise on the Rhine. Cologne has a good nightlife, as do most university towns. A daytrip to The Netherlands would also be fun.

Koblenz is also not far.

The train can get you anywhere quickly and weekend deals are sweet.
