Eierschecke:
vanilla, cream, or almond blancmange
(boild und cooled)
3-4 eggs
150g butter
150g sugar
Prepare a shart pastry (keep at a cool place) or a yeast dough (let it rise covered at a warm place), knead it, roll it out into the sprint form, and make a high border.
Mix all ingredients of the quarkmixture and fill it over the dough/pastry and make a plain surface.
Beat the egg-whites, butter, and sugar 'till it is frothy and add - spoon by spoon - the boiled and cooled blancmange. Mix in carefully the stiffly beaten egg-white of the eggs, fill this mixture over the quarkmixture and place some almond splinter on top of it, if you like.
Bake the Eierschecke with middle heating for 50 to 60 min, 'till it is goldenbrown.
(Warning: If you use upper heating your Eicherschecke could get to fast goldenbrown on the topping while the innerpart is still fluid. Try to place aluminium foil on the cake after a short term.)
