What are fun & AUTHENTIC things to do in Munich?

Some good answers and suggestions so far, but the comments about tourists makes me wonder? To quote an old classic Bette Davis film(Now, Voyager with the 2 cigarette trick) , 'Are you a typical tourist?', that means if you want to do 'AUTHENTIC' local things, then sometimes you have to act like a tourist. OK, now having said that, here is my suggestion.
Go to the Markplatz and watch the clock figures move around. Nothing spectacular, but still fun to watch. Then wander over to the outdoor market area. There are dozens of stands selling all kinds of foods, etc. I just love to walk around there taking in the sights and smells. There are many places to eat and have a drink nestled between the various stands. Great place to watch the local Germans - some of them wearing the traditional 'Lederhosen'(leather pants).
Depending on the weather you can walk over to the 'Die Wiesen' grounds where the Oktober Fest takes place. The 'tents' start going up in August and some of the breweries have small 'beer gardens' open for business. Even if they are not open it is still worth the walk.
The English Gardens and the Cathedral - Dom(with the Devil's Footprint) are a must see.
The beer tastes wonderful, but you can order other drinks as well. A real treat is a coffee and slice of cake from one of the many cafes in Munich(Starbucks can not even compete with that).

One word - BEER!
The Beer Halls and Beer Gardens are a must do. Theres the Hofbrauhaus with its Oompah Band,also the Augustiner Brewery & the Englischer Garten.Theres loads more of these places throughout the city. Also try the various different types of sausages,which all come with Sauerkraut (although I'd make sure your room is well ventilated if you do - it makes you a bit windy!!!!)
Marienplatz is the main city square where you'll find the New Town Hall which has one of those Glockenspiel Clocks with the moving figures on.

Haufberhaus,
olympic park(you can get there by subway.. and that subway is the subway for dummies. But ask actual locals/ people who use it a lot to help you get there, because the workers are no help)
bmw museum,
neuschwanstein Castle (i don't remember how to spell it.. but it's an absolutely amazing castle that walt disney used to create the Cinderella castle in disney world.. it's not directly in munich but a couple hours away)
and other things said on here.
There's also a cathedral where it is said that the devil stomped his foot in anger and it left a footprint, i'm sorry i can't remember the name. i'm sure if you google it you can find what it's called.

NOT go to the HofbrÃ¤uhaus and share tables with other tourists that are not used to drinking, get drunk and get kicked out by the security because they place mugs on their heads.
RATHER: Grab a bottle of local beer and sit down in the Englischer Garten and relax or go to a beergarden (for example Chinese Tower) and bring your food along (share tables with locals and tourists, stundents and business people alike)!
Stroll around the old town's pedestrianized area and sit down in a nice cafÃ©, maybe not the ones directly on Marienplatz, but for example in the StadtcafÃ© (close to the New Jewish Centre which is worth being looked at).
Grab a bike and ride to the Flaucher (have a bath in the Isar, it's clean, but beware of current, it's not deep, but it FLOWS!).
Check out some of the museums (for art: Old, New or Modern Pinakothek, for science: Deutsches Museum, for history: Residenz (seat of the Bavarian kings till 1918).

SchloÃŸ Nymphenburg (castle) is okay, but it's not such a highlight as Neuschwanstein or Sanssouci. BMW museum only, if you're really a car maniac. Olympic Park has nice architechture (but it's just an olympic site), new soccer stadium (for a football fan), opera house (if you like that).

It's not all about drinking in this city, though you can, if you like...

Obviously Oktoberfest would be the biggest thing here if you're going to be there during it. While the HofbrÃ¤uhaus seems like a German landmark, I found it kind of touristy and enjoyed the Seehaus im Englischen Garten, a beautiful beer garden, much more.

I would also recommend the BMW Museum, and you MUST check out the nightlife. I know MÃ¼nchen isn't particularly well known for it, but I found it very culturally interesting. Check out the 2rooms club, for starters.
