The closest is the Sheraton, which is directly across the street from the main terminal building. There is a sky bridge from the terminal building and a monorail if you're arriving at one of the other terminals. The hotel is very expensive, though.

I'd suggest check the website www.hrs.de They can give you a list of hotels and you can directly book a room there without paying in advance and you're booking is automatically cancelled if you don't show up till 4pm. But please re confirm the timing on the website.
You'll get the best hotel that fits your budget and I have never been unhappy with the service so far

Inside the Airport, there is a Hotel desk. What you can do is go to this desk, tell them what you want and they will book your reservation (ask them what star it is). They will have a shuttle to take you to the Hotel and bring you back when your ready to leave. That is what I did. It went very smoothly. Good Luck! :)
