Some of the main Castles you will want to see are:

Neuschwanstein!!! Amazing Castle and the one across from it is King Ludwig's parents so make sure you see it! (Hohenschwangau)

Otherwise, I know there is a castle somewhere in Rhineland-pfalz that if you search it is a family event, that is basically ruins with a stage and you kind of get a local medieval times experience.

There is a place between the cities of Koblenz and Mainz called "Der Tal der Lorelei" (The Valley of Lorelei). It is a region along the river Rhine about 60 Km lang, there are circa 30 castles and 27 villages in the very german old style along the whole way. The whole valley is considered as a world heritage by the UNESCO.

You can stay in any of the villages (there are a lot of small, beautiful hotels) and you can travel through the whole valley and between castles and villages by bike (you find wonderful bike lanes there), train, bus, ferry or you can also take a ship.

The valley is full with vineyards, it is in my opinion a beautiful place:

You also find a lot of castles and palaces in Bavaria, but they are spread across the whole state. That means you must have a car or a railway ticket in order to be able to move from one city to the other. However I must say Bavaria has a lot of castles and palaces that are really worth to be seen as for example Neuschwanstein Caslte. You find more information here:
