If they want to card you, they'll card you. If you can't prove your age in some way, and don't look old enough, you're out. -- And, yes, growing a beard can be a way to make you look older; but experienced staff will look through it. Your behavior won't change just because you're wearing a beard.
As I often recommend here: You'll get beer at any supermarket and in any pub when you're sixteen, and stick to that. There are many types of beer that are really, really strong. Drinking hard liquor is something you really don't need to do in Germany. I've known many a tourist who underestimated German beer (or overestimated himself) and spoilt two days of his valuable vacation time by suffering from heavy headaches.
btw, you know why the hangover in German is called "Kater" (tomcat)? -- Because all the young males suffering from it whine and groan like "miaaooowwww - my head's aching", like male cats in spring when they're looking for a mate. "No sympathies; just take an aspirin and shut up", my girlfriend said. |

It's 16 for beer and wine, but for hard liquor, like whiskey, vodka, etc. it's 18.
I noticed cashiers card a lot more in America than in Germany though.
They will ask for your ID, whether it's German or American, doesn't matter. If you want to buy it and they card you, they will want to see ID with your birth date on it, just as they do here.
