Not being Indian and looking to spend a weekend around Mumbai isn't an easy task.
You might want to fly over to Goa and spend some the weekend at one of the really nice resorts.
If you don't want to go as far as Goa, spend the weekend at one of the resorts/hotels in places within a couple of hours drive from Mumbai.
Or just relax at home with some good food, invite friends over. Could suggest something more appropriate to yourself if I knew what you like.

Go to some amusement park, in
Mumbai itself. This way, you and your family including your
child will enjoy the amusement park. Children loves
horseback,camel, pony rides.
If not, invite some small children at home, have some games
for children to play. and watch the children laughing,crying
and make movies and enjoy later on too.
