Since you did not indicate what the summer months are for you it is difficult to answer your question. But if you are coming in June, July, Aug. then expect heat, humidity and monsoon worse than Hell unless you go to the Hill stations. The time to visit Kerala is Jan. Feb. March and April.

Backwaters- Kumarakom, Allepey
This one particular resort we visited and loved every moment of it
Illikkalam lake resort on the bank of vembanad lake in Kumarakom.
Not expensive by kerala standards. they have a website also.

Beach - Kovallam, you will find plenty of resorts which are beach facing.
beach facing rooms are around 1200 - 1500 and the other varies from 400 to 600.
Don't forget to take a house boat if you can afford in backwaters.
The charges are 5000 for 24 hours. (its completely worth it)
Finally Kerala Tourism Development Corporation has resorts everywhere and they are affordable, situated at nice places and offer good services.
