Goa is very nice and has great beaches but it's also very touristy...so many people go there these days that it might be too crowded for your taste. I would say the state of Kerala b/c it isn't as much of a tourist place and it's very relaxing. There's a system of connected rivers/lakes called the Backwaters, and you can take boats out on the water and just relax and enjoy the scenery. Kerala is also known for its Ayurvedic medicine; you can get great massages there which of course is very relaxing. And then there are the beaches, which are really nice. Some are more frequented by tourists than others so you should ask around to find one that won't be very crowded. Also, I think Kerala just has more of a laidback feel to it...can't really explain it. Even its biggest city, Cochin, has a much more relaxed atmosphere than places like Bombay and Delhi (which are both great places, but not as relaxing...)
