Try Varkala in Kerala - smaller and more laid back beaches than Kovalam and it is a great place to start the backwater tours. Also try Gokarn in Karnataka for really pristine laid back beaches - although the town itself is small and really known as a Hindu pilgrimage town.

Goa rocks. It is laid back, has beautiful beaches, and lots to do. Fun parties too.

North in summer (Kulu-Manali, McGanj, Darjeeling...), South in winter (Kerala definitely - try Kovalam, it's better than Goa!) Goa is good almost all year round...but it doesn't have that Indian flavour, too touristic. Have not been, but they say Pondicherry is also good. If feeling adventurous, visit Rajasthan, especially Jaisalmer.
