A question for Irish guys? |
Hi my names John and I am from Britain. My big Nan (my great grandmother) was from Ireland she come from a place called Wexford, in ancient times, I think it was sometime in the early twenties. She has not been around for about ten years, but I remember when I was a kid growing up in Cardiff, despite her age she always used to go to the trouble of cooking me Irish food. And every morning she used to give me a teaspoon of cod liver oil and a teaspoon of honey.
I remember I used to like the honey a lot better. She also used to tell me stories about Irish stuff sometimes. I wouldn’t mind going to Ireland one day. The other day when I was coming back from the gym, I stopped in this Irish themed pub which I had never been in before and I had some colcannon and sausages, with some soda bread, which was really nice.
I am not all that good at cooking; however I would really like to learn how to cook colcannon. Do you know a good recipe for colcannon, the gravy, and the best kind of sausages to go with it? Also does anyone know where you can get soda bread from in the south Wales area of the UK? And finally is there any other Irish food which you would recommend? Here's a pretty nifty site with irish recipes (including colcannon) - personally I prefer Champ (use cream cheese rather than butter).
The best one from the list is White Soda bread, but better on Gridle than oven.

I would recommend bacon and cabbage aka "bubble and squeak" the most irish dinner you can get.
1 Shannon Traditional Slab Bacon (11/4 - 2lb)
1/2 green cabbage and 1/2 white cabbage
8 potatoes (peeled)
Salt and pepper
1. Remove slab bacon from plastic bag. Cover with cold water.
2. Bring to boil and drain.
3. Cover with fresh cold water. Bring to boil and then simmer for 25 minutes per 1lb plus 25 minutes over.
4. Remove outer leaves of cabbage. Cut in half, add to the saucepan and simmer for the last 20 minutes.
5. Remove bacon to chopping board and carve into thin slices. Drain cabbage, season with salt & pepper, chop and add a knob of butter.
6. Serve the bacon with the cabbage and boiled potatoes as well as your choice of sauce.
I oh my advice is to drink a bowl of the soup out of the bacon and cabbage with milk and salt [its really good for you especially if ur sick or have the flu] |

Colcannon is spuds with cabbage, spring onions and bacon. Literally boil the spuds and cabbage, then in the frying pan with bacon and onions. Yeahhhhhh.....COOK IT UP!.. Super tasty. Soda bread, Tesco's.
I personally would recommend a pint of guiness with a plate of mussells or oysters but not to everyones taste.
But for a truly authentic Irish food stuff look out for club orange (drink not biscuit) and tayto cheese and onion crisps. To be consumed together, amazingly flavoursome burps. |

You can bake your own soda bread, that's easy enough. It's actually better this way because you can make it as you like it.
Just google online for recipes, and try all of them until you find one that you really like. I've googled recipes for all kinds of dishes ..... |
