I've been across the Irish Sea by ferry many times, and not once have I been asked for any form of ID whatsoever. It's not surprising because you can travel to Belfast and still be in the UK and the North/South border is a completely open one, in most places you wouldn't know that you'd crossed the border, there aren't even any signs.
The only baggage check I ever had was when the Foot and Mouth outbreak was in full flow a few years ago and they were checking for people carrying meat products.
It is illegal to carry any meat product into the republic - including in sandwiches etc.

Sadly not as Dublin is in Southern Ireland a foreign country from the Uk angle and not part of United Kingdom. You can go a few miles north to Belfast and no poblem as its part of UK.
