I'm also planning a trip to Ireland soon...without much planning. My idea is to take a small carry on with some changes of clothes, and pretty much nothing else. I found a ticket into Dublin in March for $450, and I figured I can stay in hostels fairly cheap. I want to get out of the city as quick as possible and hop around the small towns, experiencing culture, not looking at paintings and other tourists. If you have any tips for me, just get back to me.

Spend time in Galway city you will love it

Well if you ant villages and beaches and stuff llike that, then come to Donegal. Its in the north of Ireland (But NOT in northern ireland - if you know what i mean?)
Theres loads of villages and scenic walks/ drives. theres a few bigger towns, but the main one is Letterkenny which is a great town.
Email if you want to know anything more.
