You didn't say whether you have citizenship rights , work visa approved, green card or applied for any of the above yet. The reason being, if your from an EA/EU country, you can apply through any of the recruitment agencies, just have your CV ready and go there in person, you will get a better response that way. If not, and your from a Non EA/EU country....unless you hold a nursing degree, doctor's degree or a Masters in one of the approved job role's, your chances are not very good. Go to the site below for the Government rules for working.

If you do have the right to work....meaning your not on a vacation passport etc (good for 90 days usually), you can search on the site below. Go under Jobseeker, and query by location, perm position, etc.

Also, use recruitment companies, as I find response's are more likely, as most companies hire them and won't deal first hand with you, even though they're information may be listed online or in the local paper's.

The best tip i would give you is to be patient, it is pretty hard to find any sort of job in galway (even unskilled!) but Fás is usually a good starting point and a newspaper called the Galway Advertiser is helpful when looking for work.
