450g plain white flour
1tsp bicarbonate of soda
1tsp cream of tartar
1tsp sea salt, ground to a powder
1tsp sugar
400g skim milk
acidophilus yoghurt or approx 300ml buttermilk
METHOD
Heat the oven to 180C/Gas 4. Sift the flour, bicarbonate of soda, cream of tartar and salt together into a bowl. Stir in the sugar. Add the yoghurt or buttermilk, mixing it in with a broad-bladed knife or with your fingers, until it gathers into a soft, wet dough.
If the dough is too dry to come together, add a little more yoghurt or a tablespoonful or two of warm water, but donât overmix.
Flour your hands and knead very briefly, then pat the dough into a mounded round and place on a floured baking tray. Cut a deep cross into the top of the loaf.
Bake in the middle of the oven for 30 minutes. Cover the top loosely with greaseproof paper and bake for another 15 minutes, or until the bread sounds hollow when tapped on the bottom. Eat it still warm from the oven, or wrap in a cloth and eat the same day. |

5 1â3 oz (150 g) whole wheat flour
7â8 oz (25 g) sugar
œ tsp (2.5 ml) salt
1 œ tsp (7.5 ml) baking powder
1 tsp (5 ml) baking soda
1 egg
8 1â8 fl oz (250 ml) buttermilk
1 oz (30 g) butter
some extra whole wheat flour , for dusting
[edit] StepsSet the oven to 190ÂșC (375ÂșF/ gas mark 5).
Pour into the mixer, the flour, whole wheat flour, sugar, salt, baking powder, baking soda and the butter. Lower the hook and mix for 1 minute. Whilst still mixing add the egg and the buttermilk. Continue mixing until it blends together. When fully blended, dust your hands and the dough with a little flour and remove.
Shape the dough into a ball and place it onto the prelined baking tray. Sprinkle the top with a dusting of flour and make an "X" on the top of the dough. Place the tray into the centre of the preheated oven and bake for 40 minutes.
After 40 minutes, remove the bread from the oven. Let it cool completely by placing it on top of an inverted fork - it will cool quicker this way - and serve! |

170g/6oz self-raising wholemeal flour
170g/6oz plain flour
œ tsp salt
œ tsp bicarbonate of soda
290ml/œ pint buttermilk
Method
1.Preheat the oven to 400F/200C/Gas 6.
2. Tip the flours, salt and bicarbonate of soda into a large mixing bowl and stir.
3. Make a well in the centre and pour in the buttermilk, mixing quickly with a large fork to form a soft dough. (Depending upon the absorbency of the flour, you may need to add a little milk if the dough seems too stiff but it should not be too wet or sticky.)
4.Turn onto a lightly floured surface and knead briefly.
5. Form into a round and flatten the dough slightly before placing on a lightly floured baking sheet.
6. Cut a cross on the top and bake for about 30 minutes or until the loaf sounds hollow when tapped. Cool on a wire rack. |

* 15 g baking powder

* 5 g baking soda
* 1 egg, lightly beaten
* 475 ml buttermilk
* 55 g butter, melted
DIRECTIONS
1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.
2. Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
3. Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor. |
