If you are American you do not have rights to work in Ireland. (Unless you are an American that is also a citizenship of one of the countries of the EU). Your employer would have to apply for a work permit for you to work but, as a bartender is not a highly specialized job or a profession where positions are hard to fill, it could prove very difficult to obtain a work permit. You could choose to be an illegal immigrant but this will mean you are going to be earning very little money as well as breaking the law.

Bartending isn't the kind of thing you arrange in advance. Just show up in Dublin, and ask in pubs. Try searching for employment agencies, but to be honest to the driect appraoch is best.
