The really scenic parts of Ireland are around the coast. Midland counties are generally flat and devoid of interesting landscapes.
Killarney and the surrounding areas in County Kerry have the most beautiful scenery, and Galway is another county like this with much of the old Irish culture preserved in the Gaeltacht (Irish speaking) areas. Northern Ireland has good scenery and a lot of history, but can be intimidating in the cities in extremist areas, even though there is not a real risk of anything happening.
A look at Dublin is essential, as the history of the Republic can be seen here in places like the GPO and the fourcourts (bullet holes from the start of the country in walls).
Cobh is a port in County Cork (if you are bringing your own car by ferry) which is close to Kerry; If you want to stay in the one place, Killarney is the place to go. If you are flying Shannon airport is in Limerick, another neighbouring county of Kerry.

I myself love the Munster counties. There is so much to do and see in the muster counties, the cliffs of mohor,Allawee caves,a drive through the Burren to see the Prehistoric Megalithic tomb,The best sea food chowder I have ever tasted is in Galway( live in Killarney Co.Kerry for 13 years and would go to Galway once a moth just for the chowder),The ring of Kerry, Dingle,Muckross Abby and West cork is just beautiful, but what ever you choose to visit and see I know you will have a great time.
