We have different types of stew and when I cook a stew I tell my family the exact type
Irish stew - true Irish stew has mutton not lamb and my mum-in law cooked Irish stew every Saturday - with mutton - she passed away last year age 90 so I think she knew what ingredients went into it.
I call stew a beef stew, with the spuds cooked seperately.
Ale stew - bottle of stout and a spoon of sugar added to beef stew.
Mulligan stew is beef, carrots, onions and spuds all cooked in the one pot.
Orla C: The poster could be referring to Dublin Coddle, you know the sausage and bacon and onion stew, which my mate makes and always looks white, looks shite but tastes grand !. |

i just call it stew, but in restaurants irish stew usually distinguished as stew that contains lamb rather than beef. By that i mean a typical irish stew contains lamb. |

Yes. But there are various different recipes. I like to add red wine to mine, let it simmer for couple of hours, turn it off, and reheat it later. The meat just melts in the mouth.
Addition: Excuse me, but Irish stew is not exclusively lamb, you can use mutton, beef or pork. And I have NEVER seen a stew done with a white sauce, not in Ireland - it sounds absolutely disgusting! |

Irish stew usually just means lamb stew. It's menu talk.
Most countries just call it stew, it's just that some restaurants name things for marketing or descriptive (menu) purposes. |

Well I just call it stew anyway. On resteraunt menus, it says irish stew though but all the actual people call it stew...its just called irish stew on menus to distingush it from other stews...... |

A real Irish stew uses Lamb and is stewed in a "white" sauce I personally think it is disgusting. It always has fat floating in the sauce from the lamb.
Beef stew is simply stewing steak and veg & potatoes cooked in a beef sauce often flavoured by oxtail or beef soup mix. Basically a beef caserole.
Ugh I feel sick thinking of Irish stew. if in a restaurant, you can ask if the Irish stew is lamb in white sauce or is it basically a beef caserole then you can choose. |
