West Cork is lovely, keep away from Cobh though, it is full of nasty people.

im from cork! and if you want to go to somewhere in the country, a place called killeagh is nice. i live their. its half an hour from the city and it has 2 or 3 b+b's,like 4 or 5 pubs where the craic is mighty, a restaurant and 3 shops,a hairdresser and a beautician. one b+b is called tattans and have good rates. its a really beautiful countryside place where their is often gaa matches to watch. its located in the middle of youghal and midleton, two large towns that have great restaurants and shops! their is also hotels in these areas including the 5 star midleton park hotel!

Skibereen and Clonakilty in West Cork are beautiful places to stay, and they're really close to the sea. The first answer provided you with great links for accomodation, but I would recommend those towns to stay in.
