In answer to the first part, Royal Mail do operate during the weekend, However, there are no front line (delivery or collection) duties on a sunday, just some sorting and driving, and a Saturday is an early finish for deliveries and collections. However, when you post international mail, Royal Mail handles it for the least. They just ship it to the airport in the UK, where it is flown to the relevant country in a British Airways jet's baggage hold. When it lands, its dealt with by the arriving country's postal service. They handle the Customs clearance, sorting and final delivery.
Officially, you should allow Friday, Saturday and Monday. However, that is assuming that the Irish postal service (who take it once it reaches the border / airport / seaport) operate a full Saturday Service as Royal Mail does.
Don't include the Thursday, as the cut-off for International Mail is earlier in the day than most domestic mail (Mail posted as late as 7.30pm may make next day delivery within the UK, but its unlikely that international mail will, as you have to factor in customs, security, airlines and ferries etc).
Also, you can probably safely say that it will be out of the UK by Friday evening, so then it depends on the efficiency of the Irish postal service, who are outside Royal Mail's control.
It is possible that it may make Saturday (or even Friday if posted early), but don't be surprised if its Monday, or even Tuesday (some foreign postal services don't count Saturday). |

Although An Post, operates sorting offices etc. over the weekend, door to door deliveries only operate Monday to Friday. |

Yes. An Post in Dublin does operate a Saturday service in some areas. Many other major towns do as well.
Rural areas and small towns do not operate a Saturday delivery service, except just before Christmas.
There is no postal service on Sunday, anywhere. |

I don't know anything about the Royal Mail, but seeing as you're looking for it to be delivered in Ireland, there are no postal deliveries on Saturdays in Ireland, and I have never seen any Royal Mail vans in the Republic of Ireland. |

You shouldn't count Thursday.
Royal Mail does operate on a Saturday but whether Royal Mail operate or not on the weekends is irrelevant, once the parcel leaves the UK it's down to the Irish postal service to deliver it, so if you have no Saturday post in your area then you won't get it until next week sometime. |
