Head south through the Burren, and if the weather is good take the Killimer-Tarbert ferry across the Shannon, and mosey through County Kerry through Dingle, Kenmare and onto County Cork via the Healy Pass on the Beara Peninsula. Finish in Cork.
You can take the main road from Cork to Limerick you'd be there in about 2 hours, and then it's just another 2 hours from Limerick to Galway by the main road.

Totally agree with previous answer. Head south from galway, sign posted limerick (N18) then you turn right in Kilcolgan for the Burren. It is all very well signposted so getting road no's wont be a problem. Enjoy.

Orla c, has pretty much nailed the plan there! You might want to visit Dublin as well though. However, traffic in the city is savage. I'd recommend ditching the car at the hotel and walking around the city (dublin is relatively flat and extremely walkable).
