Outside of Dublin there are many places. You can take the train to Galway, Limerick, Cork, Waterford or Kilkenny.

All Ireland is touristy,due to its unfortunate history and its people are all over the world so interest is engendered in all of Ireland.I honestly believe that the most genuine people are in Co Kerry or South West Cork, Dingle has a good mix .Tralee is great !Kenmare is quieter and a little more sedate, but for the Craic and good food Castletown Bearhaven will not be beaten.When the good men were needed the Dublin Jacks hid under the bed,get out of Ireland's Vegas.

Depends on your definition of "Irishy," but I recommend trying to get into the Gaeltacht regions if you can. Dingle is a good choice. Yes, it's kind of touristy and you're going to find a lot of tourist-oriented stuff there, but the people are great and it shouldn't be too hard to find activities that the tourists haven't invaded yet if you ask around. If you go to the Aran Islands, try one of the smaller two instead of/in addition to Inis Mor. The tourists don't get to them as much in my experience, and I've been out there in the middle of summer tourist season several times. Galway is another interesting mix of touristy and non-touristy. For example, there's this one pub on one of the more tourist-oriented streets that usually seems to be filled with locals instead of tourists. I've been there with my Irish friends several times. You could also try some towns in the more central counties -- they don't get as much tourism as the big cities and the coastal areas, so they're not as drowned in tourists or touristy things in general. On the down side, there's not always as much to hold the attention of a visitor and I once found that it was almost impossible to find a place to eat dinner outside of normal dinner hours. The other piece of advice I would give you is to try to find bed and breakfasts instead of big hotels. Pretty much every city has them and most towns have a couple too. Every so often you run into a bad egg where the proprietors aren't very friendly and kind of keep to themselves, but most of the ones I've ever stayed in have friendly people running them and they would be in the best position to direct you to local things that are less likely to be overrun by tourists. If you're thinking of going out to Galway, shoot me an email and I can probably dig up the names of some of the better places I've stayed.
