In Dublin the only thing really to do in the evening is go to the pub and I dont think it would be wise to bring a 2 year old with you.

Not a whole lot, you can't bring a child into a pub after 9 pm anymore.

keep an eye out for festivals and the like but in fairness what is there to do in the evening anywhere with a 2 yr old in tow

there's never anything to do in dublin

go to france or portugal or spain
you could go to a cafe and sit outside, near a beach with a nice sunset compared to dublin where you might die from pneumonia and get robbed by a gypsie
