In summer I would direct you to Kerry and Cork, or to Connemara, in winter to the rugged coastlines of Derry and Donegal, which are even more spectacular in wild weather.
And I would recommend to stay out of Dublin any time of the year.

Cork/Kerry area is nice, full of nice scenery and plenty of tourist attractions such as blarney castle/titanic musuem etc

Drive the ring of Kerry and the peninsulas in the southwest - you won't be disappointed!

Wexford area. It has lovely beaches, lovely scenery and its full of historic stuff aswell!
It has the best weather conditions in the country and is only an hours drive from Dublin city!!
Unless you're lookin for the remote scenic Ireland, then you should visit Irelands West Galway or Mayo. These 2 places are full of the very remote peaceful country-side! But dont worry its not all just a bog you can visit Galway City while there!
