I like roast potatoes.

First I put on the oven to heat to 180 C. Then I peel the potatoes, cut them into quarters or eighths, depending on how big they are, rinse them off and let them drain, then I get a couple of sprigs of fresh rosemary and an entire garlic, I crush each clove of garlic under the blade of my big knife, cut off the root end and peel off the skin and crush the rosemary in my hand to release the aroma, then I put the garlic, rosemary and potatoes into a baking dish and pour about a cupful of olive oil over the whole lot, and mix them up so that every surface is covered in the oil. Then I put the whole lot into the oven without a cover, for about an hour, and take it out to give it a good stir every 20 minutes or so, to make sure that all the bits are nicely oiled and therefore nicely crisped.

Delicious with salad and a nice chop. Or lambburger. Or piece of steak. Or whatever you fancy! Just don't have it too often, it's a bit heavy. It's a good meal to have if you're going on a long hike the next day!

Simply, yet brilliant- mash them, then just before you take them out of the pot, add milk and butter and mash it in. Creamy and delicious!
