When visiting ireland there are a few places i love to go:
Dublin:it is expensive but so lovely, for a cheap place to eat go to the bad @ss cafe, have to go to guiness, christ cathedrial church, dublin castle
Knock: a total religious experience (eat at a inn good deal)
Galway: its kinda like a little dublin...great parties and music
To get off the beat and path go to middle of ireland (roscommon, limrick, longford) i am from that area and i love it....that is a typical smalll irish town very friendly

Off the beaten track. Basically take your hired car and turn it off the main roads, and get lost on the little back roads.

Good luck finding a place that serves decent food though.

West Cork is lovely. Clonakilty has some great pubs and restaurants. Drive from there to Kenmare and the Beara Peninsula. It's a beautiful part of the country, and I'm going there again this weekend. Yeay!

Dingle, it is a beautiful place.
Wherever you do end up going, you are going to love it!
If you do go to Dublin, which is great, then make sure you go to Gogarty's

It is a bit touristy but the live music is great and the atmosphere amazing!

i would go to west cork. stayed in union hall, in pier holiday homes,a small village near skibbereen and clonakilty. it has 4 pubs and all locals with all the best stories you could imagine! if your down there pop into moloneys....the best pub in the village and try dinty's for food...best i've ever eaten!
