Hhmmm Cork is a good idea. Lots to do and the countryside and coast is beautiful.
Connemara in the west of Ireland would be my favourite.
It's on the coast and very wild and sparsely populated- lots of castles nd romantic scenery. It's also near the city of Galway which is great for culture, history, restaurants etc.
Cork though is also good for similar reasons and is close to other popular tourist attractions in counties like Kerry.
Clare and the Burren in the west and Co Donegal in the North would also be good options.
This website is good for places to stay and eat from castles and 5 star hotels to cheaper options.

Galway! MUCH nicer city than Cork, very much the quintessential Irish town. There are great hotels and adorable bed and breakfasts in Salthill, which is the area right on the beach a few miles from the city. Great pubs, great restaurants, and great quick day trips to places like Connemara and Clare.
