I suggest Killarney in County Kerry.
It's one of the most beautiful places in Ireland (when it's not raining). The town is a decent size and Cork City is only an hour and a half away by car. I lived in Killarney for a couple of years and I loved it. I would suggest maybe living just outside the town itself if you're looking for quietness but if you want to be in the centre of it all there are plenty of new houses and apartments to choose from to rent and buy. The people are generally friendly and I don't remember there being much crime at all when I lived there. The only thing I remember is some guy who went about stealing letters from shop and restaurant signs. I don't think anybody ever found out who it was but it seemed like every day there was another letter missing from a shopfront or a business in the town : )

somewhere in south Dublin,
-its quiet,
-low crime
-near loads of shopping centre's like Dundrum
-connected to city centre by Luas
-some of the best schools in the country

only one problem
-v. expensive
