These 2 websites might help with the "staying in a castle" part of your question at least you can see the location of various castles around Ireland, plenty around Dublin and Limerick, Glin Castle near Limerick looks stunning

http://www.celticcastles.com/map_ireland.asp?view_type=All
Not sure if you need to choose an area you would like to visit and then search for accommodation or visa versa? Check out the Irish Tourism website http://www.discoverireland.com/ire/ for a few ideas of what Ireland has to offer.
Parts of Co. Clare are very beautiful with lots to do. Also Galway and the Ring of Kerry obviously for sight seeing and the SW coast, around Timoleague and Kinsale is beautiful. Dublin is a city, it has city attractions and you pay city prices. Perhaps you could incorporate visiting Dublin and then travelling on elsewhere to explore more of the countryside?
Best time of year as regards weather is very hard to say, we're supposedly in for a good summer so the weather people say? May is usually good as a rule but we can have rain and wind at any time unfortunately. Last summer was a washout. |

Staying in a castle? Well, I suppose each to their own - they're just big houses, really, if you think about it. But if you want to pay that much, then go to www.discoverireland.ie and you'll see a list of castles that are also hotels.
Best time of year is from June to the end of September, simply because of the number of local festivals that are on - at least there's stuff to do indoors if the weather isn't forgiving, which is a major consideration in Ireland. If it's guaranteed sunshine you're after, don't come to Ireland.
Dublin, for all that it's the capital, and is very interesting and all the rest, still feels very English - even native Dubliners have told me this, and in comparison to the great cities of mainland Europe, is rather parochial. That said, it's worth a visit, but it is not representative of Ireland. I would suggest going on a tour if it's your first time coming to Ireland, just so you get a good look at the countryside, and don't have to worry about directions or anything like that. It's ALL good, I couldn't tell you any particular area you should definitiely see.
If you want to hire a car, please be aware that distances take longer to travel in Ireland simply because of the state of the infrastructure. You cannot drive 100 miles in 100 minutes, it simply isn't possible. I live in County Limerick, to get to Dublin airport I have to allow at least 3 hours - it's about 125 miles or so - to be on the safe side. Also, petrol (what's called gas in other parts of the world) is just over €1 a litre in most places at the moment, while diesel is currently just under €1 per litre. There are about 7.5 litres to a gallon, so do your maths. You will have have to pay the cost of renting, and some companies ask for extra insurance also. |

Wicklow County is breathtakingly gorgeous! It's a 40 minute bus ride from the town Bray, which is about a 2 hour ride from Dublin. If you like the mountain scene, definitely check it out. There's an awesome hostile there, too, called Knockree; it was newly renovated July 2008.
Here's a link to my album on Facebook...It's of the trip to and in Wicklow
