Well, I did a Google search, and although nothing popped up for Northern Ireland, I found these:

The Fitzpatrick Castle Dublin actually offers Christmas lunch (29) and Christmas dinner (39).

Royal Hotel in Wicklow offers a package that includes Christmas dinner.

Hope that helps!

The Slieve Donard Hotel in Newcastle, Co Down is open for Christmas Day lunch and Dinner. It is a series of buffet starters, carvery or a la carte and then a fabulous dessert buffet.

For kids there are presents and then for adults music etc.

Set on the beach on Newcastle bay is a brilliant place to sit for the afternoon and chill or take a walk.

Having been for the past couple of years, makes you wonder why you'd bother staying at home!

a few places in kilkenny open. you have to be careful about hotels advertising christmas lunch, loads of them have it advertised but they are just turkey and ham lunches, they are not actually on christmas day, so if you google christmas lunch, you just get places that do turkey and ham dinners in the run up to christmas.

sunie
most hotels are open in the republic just inquire with which ever county you will be in
