Im Irish and I'm not a big fan of potatoes, I only eat them the odd times. Years ago before the famine they were cheap to grow and provided a lot of nutrients for the peasants of the time, they had no money to buy proper food, so they fed themselves on mostly potatoes. This is how the famine was such a disaster, because it struck all the potato crops

Traditionally it was the staple food as little else can be grown in the poor land most Irish people had, the English owned the better land and would export 'cash-crops' back to England (even during the famine which affected potatoes only).
Personally I prefer rice and pasta to potatoes , but these are luxuries that weren't available to our ancestors.

Most Irish people do not look like potatoes! well some do ;p

I would say it is less they like it than it was forced on them as part of their diet. when the english still ruled ireland the irish were not allowed to own land so they were forced to rent from english landlords. around the time of the napolionic wars, grain shipments from europe were cut off to england so they turned to ireland for their crops. the irish farms then committed most of their land to wheat and used potatoes as an easy source source of nutrition that didn't take up too much farm space. it just became a major staple of their diet.

Irish people like it because it was mostly available in Ireland and thus became their staple diet. Its easy to grow.
