Are stores closed in Italy on Sunday?

I want to take a trip there and wonder if I should go there on Sunday or the next day instead.

mostly they are. You may find open souvenir shops open in the main touristic cities or some very famous stylish trade marks (like Versace-Valentino etc) but this also in very touristic places. Consider it is all closed then you may find something open. No supermarkets, anyway. In the mornings, pastry shops and travel agents are open. Some pharmacies but not all of them. Sorry!
You'd rather go on the next day but consider that on Monday mornings clothes shops, shoe shops and book shops are closed.

sietejunio has got it right. Your best bet is to go on a Monday--- unless you arrive during the Christmas holidays when you'll find most shops and certainly the Malls open on Sundays too.

It depends on the store and where you are. If you are in tourist areas then most stores will be open on Sunday. If you are not in these ares smaller stores and mama and pop stores are usually closed. Usually bigger stores and coperate stores are starting to be open more and more on sundays.
