Shops are usually open all day on Friday and Saturday, Easter just during morning; closed Monday, but's not mandatory. Museum may vary a lot according to Cities (but should be open on Easter), while it's very easy to find restaurants open since those are the days they can work (and gain :) more.

If you want to stay some more days, please remember April, 25 is also public holyday, in Italy.

Depends on where you go - some big cities will operate shorter hours on Friday and Monday, Saturday ought to be normal and Sunday will probably be observed. Most independent stores will observe the holiday.
In smaller towns it's more likely that most places will be closed. However celebrations will be going on so some places will make the most of it. Sady there isn't a quick answer.

Remember years ago (the easter period) on a school trip to Rome and Naples that to much disappointment the Colosseum was closed, the main reason for the school trip. Apart from that we went to Pompeii which made our visit worth while.

Italy is a beautiful country and there is plenty to see depending on your destination. Come and enjoy the sun and food etc...etc.

I fell in love with this counrty that I decided years ago that I would make it my home.
