Best is to just go to the area you want to be working in. (Check in at the local hostel - Ostello di Gioventu.) Ask around. Walk/bike the countryside where crops are approaching harvest time. Hang around - that's what the Italians understand as in rural areas they aren't into being 'in fretto'. ( In a hurry) You need to hang around to prove you are serious in your want/need for work.
Once in, it's a wonderful (the best) way of life. Work isn't everything and the Italians have a great balance of priorities between work and living. You'll enjoy the 'living ' element.
This work use to be done by illegal 'in & out' immigrants from eastern Europe. Now they can get better paid, year round, work in NW. Europe so willing hands are needed in mid-Europe. Go for it, the experience can be back-breaking but enormously and unforgettably rewarding (NOT financially)

Fruit picking in the south is akin to slave labour. Often the picking is organized by gang bosses and folks often get treated like trash. Steer clear...
I suggest you contact some of the northern wine houses and see what's available.
Finally - there is nothing really romantic about fruit picking. It's hot back breaking work. Bugs, the heat and sometimes jerk bosses. I sure do wish you the best and trust you will luck into a hard working but civil situation.
