How is shopping in Italy different from shopping in the USA or in Canada?

is their method of payment typically different?
are the hours different from the typical American 9-5?

hi in italy we use Euro and not dollars and anywhere are accept. you must have the Euro currency.
you can pay with cash, atm or credit card.
usually the opening time for the shop are 9.00am 12.30pm 4.00pm to 7.30pm. every city have their time table and usually they are close the sunday and another afternoon (depend the city in milan for example is monday afternoon, in foggia thursday afternoon).
in some sothern towns the arvo opening could be little bit late and the close around 9.00pm
considering the big sale in italy are in july and january but the starting changing for every regions.

In smaller towns, the stores usually close between 1 and 4 or so...However in the bigger cities it is much like the US. In most grocery stores, you have to bag your own groceries. As far as payment goes, most places take cash and cards just like in the US. Just be sure to convert the amount from Euros to Dollars before you buy...so you know how much you are actually spending.

When you enter the store, if it is a smaller store, it is polite to acknowledge the shop keeper either with a Buongiorno (hello) or a ciao (casual greeting like "hey")

Aside for the fact that they don't take Dollars (only Euros) there are small differences. They take bank & credit cards too.
The hours in store in major cities are likely to be as those in the Us anymore - 9am to 6 or 7PM. Supermarkets in large cities open at 9am and usually close at 7 or 8PM. Small town shops may close for a lunch break that may last 2 to 3 hours. Many deli / butcher shops close on Wednesday afternoons.
One big difference is in bars: You pay after you've finished drinking. You don't lay your money on the counter. The bar tender will know who much you've had to drink or s/he will ask you what you've had.
