As a vegetarian, I review many of the restaurants that I eat at and provide the address and other contact information.
In general, the farther SOUTH you go in Europe the better the growing conditions for vegetables, so you are more likely to find good vegetarian cuisine along the Mediterranean coast.

Go to as many places as you can, and have fun. The whole world has vegetables, so it shouldn't be a problem. If it were me, I would see the U.K., Germany, Switzerland, Italy, France and as many places as my wallet would take me.
