I'm living in Tuscany in a small village a 30 miles away from Florence but I'll not suggest you my place since itsn't quaint. However in my region there are really a lot of small quaint villages that are not too touristy ;you'll be spoiled for choice.
I'll give you a small list with the website links.

You must go to Civita di Bagnoregio.
It is further South then Florence, but is delightful!
Take a train from Florence to Orvieto to get there. Orvieto is a little more then an hour South of Florence.
Ask the man at the newstand how to get there-he will tell you.
