You already have the flight tips and there is really little cheaper than Ryanair, but you should book early to get a low price. As far as the accommodation is concerned your best bet is either to rent a flat (I’m quoting you my son Mark’s site) or to book into one of the Church’s Guest houses, they are very professional and quite cheap, and there are lots of them.
You made the right choice for January, it’s the low season.
Try talking to your local priest, he might have contacts to Irish fathers in Rome, and consequently to Irish Guest houses of the church.

ps just another tip. Don't be taken in by so called "cheap accomodation", you invariably end up in one of the poorer parts of Rome, or in an unsavory room. The Church and professional Rent agencies have a reputation to keep.
Feel free to write me any offers they make you and I'll give you my advice on the choice.

Unfortunately Ryanair only flies to Rome Ciampino once a day, so there's not a lot of option time-wise. Going out on Friday or Saturday would be 12.20pm flight, arriving at 4.20pm local time in Rome (i.e. 3.20pm Irish time).

Coming back on Sunday would be on 9.35am flight that arrives in Dublin at 11.50am, whereas flying back on Monday would be on 5.50pm flight that arrives at 8.05pm.

I would suggest going out on Saturday and to return on Monday. Working on this basis:

a) Outbound Sat 17th, return Mon 19th : 201.36 for flights for 2 persons including taxes. Assuming there's no luggages to be checked in, no need for priority boarding and your parents are doing online check in before they fly, then add 20euro for credit card charges --> total 221.36

b) Outbound Sat 23rd, return Mon 26th : with same criteria as above, 191.36 for flights for 2 persons, plus 20 for credit card charges --> total 211.36

Difference in flight price is just 10 between those two weekends.

Please note, the prices are correct as of now, when I check on Ryanair. This may change over the course of time, depending on flight demands as well as if Ryanair runs more promotions or not. I can't guarantee this price to stay like this at all time.

Good luck!

On our last trip to Rome we stayed at the Hotel Villa Florence.
The hotel is conveniently away from but near to the center of Rome.

It was Romantic and charming.
PS The price was right too.

Perhaps this page can help you
http://www.romanlife-romeitaly.com/cheap-airline-tickets-to-italy.html
it explains how to use Kayak.
Kayak is a flight and accommodation search engine that can compare hundreds of prices for cheap airline tickets to Rome for the dates and requirements that you have. And you can also search for your Rome hotels at the same time.
Rome can be quite cold in Jan (but still have sunny days too) so I suggest they pack warm clothes.
Jan is a nice time to go as the Rome tourist attractions are a lot easier to see.
I'm sure they will enjoy it.
