You don't say which area of Tuscany you will be in (it's makes a difference -- there are hundreds of these producers) or whether you'll have your own transportation. It's hard to do a lot of this just using public transport -- you'll want to rent a car or get a car and driver.

I'm not from the area but I did a tour of a wine cellar once. There are many, so you shouldn't have a problem finding the right tour for your stay.

also, email the florence or siena tourist offices directly & they will give you up to date info as to which allow tourists & times. they can also hook you up w/ a tour which can get you into the private vinyards & olive oil processors....generally, it does no good to just drop in....
