I'm sure this is easy to find out online, but since I love talking about my adoptive country, I'll tell you anyway!

Ski? People ski mainly in the Dolomites north of Verona (e.g. the resort of Madonna di Campiglio) or the Alps north west of Turin. The latter recently hosted the winter olympics, but the former is more beautiful in my opinion. Lots of peaks over 3000m.

Lie in the sun on a sandy beach? All down the Adriatic coast, from Venice to Puglia. Try Rimini for example, great coastal resorts.

Climb mountains? Alps, Dolomites, Apennines - Italy is full of mountains and all offer great hiking. An example is the Gran Sasso, the biggest Apennine, which is right in the middle of Italy.

Enjoy nightlife? Milan's fashionable area is a great place for a night out, plus the beach resorts.

Take part in water-sports? Most of the beaches all around Italy, but particularly picturesque are the resort towns on the great lakes, like Lake Garda.

Visit Quiet villages? Everywhere! Pretty, undiscovered villages can be found in the mountains of Abruzzo and Molise in central Italy.

Visit historic buildings? Everywhere! Venice, Florence and Rome may be the most organized for visiting tourists though.

Visit a vineyard? Also everywhere! Piemonte, Tuscany and Sicily produce many famous grapes and have cantinas that are open for visiting. Most recently, I've visited Pietrantonj cantina in Abruzzo, which has maintained the historic machinery for visitors to view.

Nightlife - Naples (Napoli)
Quiet villages - Florence (Firenze)
Historic buildings - Rome (Roma), Florence, or Pompeii
I don't know about the other places.
