1st One - la maschera?
Spaghetti (and Pasta in general), carbonara (pasta with a souce made with eggs, pecorino cheese or grana cheese and bacon), gnocchi, cannelloni... and than there are some different meals in any different region. In the North you can find Pizzoccheri (a kind of pasta with potatoes and spinach), Polenta (thick maize porridge served with meat, cheese etc.), Cotoletta (cutlet covered with breadcrumbs), pasta with mushroom sauce and risotto with saffron (honestly I don't like it very much); in the noth-center you can find very good salami and meats, and pasta with meat souce; near Rome you can eat a brilliant Amatriciana, that is pasta with tomato souce, pecorino cheese and bacon; in south you can find the best pizza (sorry but I think so!) and near the sea (everywhere) you can taste very good sea food.
About dessert, you have to try italian ice-cream and Tiramisù. In each restaurant there is usually a good choice of italian desserts.

Um....everything!

Try beef carpaccio. Its thinly sliced raw beef. Yea, yea, I know. Raw beef. Eat it with olive oil and parmesean cheese. It's to die for!....and you WON'T get sick.

I'm Italian...I know. ;)

Ribollita is my favorite. You can find it in the Tuscany region. I also like paste e fagioli. I also liked salami and Pruschetta a lot when I was in Italy. Of course you can't forget gelato either.

Melone and proscuitto is a great first dish
followed by Saltimbocca ala Romana with a nice wine from Frascati.

meat: fiorentina, bistecca, agnello, roast beef, salsiccia, polpette, polpettone, cotoletta.

babbà, cannoli, cassata, tiramisù, tartufo black/white, cake with fruits, ice creams.
