arrivederci is goodbye,
ci vediamo is "see you"
ciao means both hello and bye

There are several way you could say goodbye in Italian

1. Ciao- more common-Bye and Hi
2. Arrivederci- informal way ---until we see each other again
3. Addio-- For a long time a part; forever... However, it is still used to say goodbye even if you will see that person again. but not as common as Ciao or Arrivederci

Other ways to say goodbye
4. Ci vediamo presto- See you soon
5. A presto-See you soon
6. Ci vediamo piu' tardi- See you later
7. Ci vediamo...See you

Most Italians here in Naples say Ciao or Ciao Ciao! You can also say Arrividerci.

It depends....
If you are saying good bye to someone you know fairly well you would say ciao (bye) or ci vediamo dopo (see you later)
If you are saying good bye to someone you do not know you would say arrivederci (good bye) or arrivederla (formal only to be used with your elders or a person of importance)

Probably a special word, but 'Ciao' also covers it. My old English teacher kept remarking on how you could just say ciao to someone on the street and it would be hello and good bye in one.
